Tomato and Smoked Gouda Cheese Soup

1 (42-oz) can tomatoes
12 oz smoked Gouda cheese, cut into 1-in cubes
1/2 c. fresh basil leaves
1 (14-oz) can chicken broth
salt and pepper to taste

Process the tomatoes, cheese, basil and broth in a food processor or blender until the cheese is finely chopped. Pour into a saucepan. Bring to a light boil and reduce the heat to low. Simmer for 30 minutes; some of the cheese will remain unmelted. Season with salt and pepper. You may use one 28-oz can diced tomatoes and one 14-oz can tomatoes with basil, garlic and oregano instead of one 42-oz can tomatoes.

If you can find them, I recommend Cento Tomatoes, they use San Marzano tomatoes and they are excellent :-)
